The only, soluzion is you to not update, or downgrade the game to patch 7.
Right click the game -> propreties -> beta -> select patch 7
Voilà, enjoy your patch 7 save.
That is not true at all, I upgraded my patch #7 save file to patch #8 after getting rid of almost all mods (only 3 mods - namely "Waypoint Inside Emerald Grove" + its dependencies "Mod Configuration Menu" and "Volition Cabinet" - were the only ones I couldn't get rid of because then the savegame wouldn't load but after patching it would still load with the mods active normally).
Even more so debunking that claim is the fact that savegames from August 2023 downloaded via Nexusmods (which I used for testing purposes a few times) load in patch #8 perfectly fine.
There seems to be an issue with some saves sometimes though which causes the "Deprecated version"-message and I've come across two ways you could try to remedy it:
or
Which basically amounts to almost the same, just one is getting the saves back from the cloud (which the OP doesn't seem to have) and the other one is copy-pasting them back manually.
Can't see how patching down to #7 could help since it's somehow corrupted and should load fine in patch #8 if it were normal.
Weird than, because there is a specific patch 7 in beta options to allow those with old saves to get going, and i had the deprecated saves of patch 7 too.
Might be some mod that created the situation then? not sure.
The old branch to stay on patch #7 ensures that runs which use outdated mods (or never got an update even) or ones that break with patch #8 could be completed.
De-modding your game completely before patching can be a bit of a hassle, sometimes stuff like "Mod Uninstaller" helps with deleting every added item/condition (otherwise the save won't load if the mod in question is missing) but there's other instances where removing a mod seemingly always stops the save from loading correctly (as was the case with the Waypoint-mod for me), so it's no surprise not everyone wants to go through that process and Larian at least offers an alternative to finish your current playthrough.
