could be sooner than you think! I'd give it a week
but yes OP you can stop the game from updating, disable it from the game setting on steam then just launch from the exe
You can create a desktop shortcut from either the bg3.exe (Vulkan) or the bg3_dx11.exe and run the game without Steam launching.
This way, you can keep patch 7 and not update.
I play with 70 - 80 mods too but honestly, i still suggest you restart with patch 8 as the amount of content added make it absolutely worth to restart.

And if it is accurate, more than a week yet for the stress test.
only issue is you have to leave it untouched in the download queue it wont auto update it will just sit there waiting for you to manually start the download.
well if we consider stress test update 3 came out like a week ago, and a new round of FINAL stress test invites went out yesterday, it could be sooner than we think, but maybe I'm just being optimistic
