What does matter is the god's alignment. As a Bahamut cleric you will get occasional "Cleric of Good Diety" dialogue options.
Want to be a complete evil psychotic mass murderer that somehow serves a god of justice and love ?
That somehow works....
All diety choice does in the game is grant you a few dialog choices and possibly make a few checks easier then they normally would be (often other classes get similar things tied to their class as well)

Baal worshipper (needs mods) gets Durge-like interactions
Shar (likewise) gets SH-origin-like interactions
Vlaakith (must be Githyanki) gets Lae-like interactions
Mystra gets unique interactions with Gale, Elminster, and her
Selune is the most impactful and available choice (for all good clerics)
Myrkul and Bane (needs mods) changes up interactions with Ketheric & Gortash
Umberlee will give you the most access to her shrine in the city
Silvanus - will affect your interactions in the Grove
Lolth (must be drow) - will affect interactions with Nere, Karniss, and other drow
Lathander - affects your interactions in the Monastery
Loviatar - mostly affects your interactions with Abdirak
As for Bahamut, Tiamat, Tyr, Helm, and so many others, it mostly affects some things, but mostly dependent on whether the god is good or evil.
