If you want my direct opinion on the matter Hags are immortal beings (the diet soda immortal AKA they don't die of any natural causes) who are at their core are malignant creatures. As a sentient creature a Hag is capable of change, but sadism is their core nature nearly all of them don't want to change. If you see a Hag harming someone, and you let them go unless something else kills them they will in all likelihood pull the same ♥♥♥♥ you witnessed after your grandchildren's children have died even if you are an elf.
As for contextually in BG3 once you have dealt with Auntie Ethel as a hag she doesn't reappear.
Im pretty sure this story also has a followup in Act 3 (but it wont show as part of the same quest in your journal)
