How to heal?
I want to heal my team using Shadowheart's healing spell, but it is greyed out, with a red exclamation of level 1 spell slot. Any ideas?

Wearing gear you're not proficient with is generally gonna block you from casting spells. Look at what she's wearing, there should be red text at the bottom of the gear description telling you whether they're proficient with it or not.
Take a long rest.

Are you playing on PC? On the lower right side of the screen there should be some buttons. One of them is where you can select short rests, long rests, or "go to camp".

When Shadowheart (or anyone else) uses up all their spell slots, they need to long rest in order to refresh them. Most spells cost a spell slot in order to use.

In case you are still on the Nautiloid, though, you can't long rest there.

Some healing spells work in combat, others only outside of combat. Could be your issue.
Could also be that you ran out of spell slots.
A red exclamation mark (I've never seen one) would make me suspect that some Condition is temporarily blocking spellcasting. You'd have to check those in the character sheet.
Silence prevents spell casting too.

What are spell slots, if I have the spell already there (in the row) what is the problem?

You can only cast so many leveled spells per long rest. Once you’re out of spell slots you will need to complete a long rest in order to get them back. Here’s an article that explains how spell slots work: https://gamerant.com/baldurs-gate-3-spell-slots-bg3/

I recommend you start reading in-game tutorials from this point on.

It means you don't have the spell slot.

Uh, they pop up during gameplay… like when you create your first character, first time in combat, first time opening the map, stuff like that.

Is there a way to go back to them?

Probably not because you’re far enough along in the game that they won’t pop up again. I think you should just google how spell slots work in BG3 or 5e. That will help you understand why you “can’t heal”

I still haven't beat the first part of the game, I still have the worms, so I don't see how I could have gone through all the tuts
When you start a new game, it asks if you want to reset the tutorials. There may be a way to reset them without starting a new game, if you look in the settings.

Otherwise, try using https://bg3.wiki
