Other mages / clerics (Shadow) can use transform magic to hide their real form -> shapeshift to another race.
Vampires were hinted, but can't recall if there's a definitive answer yet.
Possible, but not its only use. With the Polymorph spell specifically, it turns them into a creature with a CR equal or lower to the target (or level if they don't have CR), they get the stats and mental ability of that creature.
Shapechange keeps your 'brain' stats, yes.
