As a gay Hispanic, feel free to play any combination of gay and Hispanic in any game (though Spain doesn't actually exist in FR). You don't need any permission to do so, but as a representative, you have my permissions (again, even though you don't need it).

Heck, feel free to explore Hispanic culture. I freely give "appropriation" rights to all. We can't learn about each other if we covet our culture from everyone else.

My ancestors have formal family photos with giant sombreros and burlap ponchos. Wear them if you wanna! Wear historic and traditional Hispanic dresses if that's your desire! Sing! Dance! Laugh! Enjoy!

If other people out there can claim they represent me even if I disagree, I can go ahead and claim I represent the gay and Hispanic populations regardless if they disagree.

I have a black brother who liked to be referred to as "black" a black secretary who liked to be referred to as "african american" and specifically did not like to be referred to as "black." I support being considerate, but how is playing a single player game of any issue? You're not going out wearing blackface. If for anything your friend has to play ambassador, even for the littlest things such as a fantasy game, I think they'd find it highly annoying and spineless. If you do something (mildly) offensive, they can come to you instead, and tell you. How about that?

In a single player game, it is irrelevant. In a game where you are playing with randos, you just have to accept that some people are going to do and say things you don't like. When playing with friends in split-screen, some friends might not want you to curse, so don't curse. Some friends might have other things they prefer you don't do, so don't do them. If you find it too restrictive, your choice is either do things they don't like or play with someone else. Just make your choices without ignorance; don't blunder around like an overweight bull in a china shop unless it is your intention to either offend or show you don't care if you offend.

I was also in a TT game where a gay person requested a straight person (who was playing a bisexual character) not play-act gay. Nobody had a problem with it. I personally didn't care either way, but most definitely sided with the gay man on the issue because the goal is for everyone to have fun and if that means you keep something in head-canon instead of on display, that's not a heavy burden to lift.
