STR won't do much for it, well, it could if it was using the Titanstring Bow or similar.

I'm using the Ancient Arcane Archer mod already, and it's weird, because it's a Fighter subclass the game seems to recommend putting points into STR, BUT, honestly, it really benefits far more from DEX or INT.
If you choose Arcane Shots that require a Save, like Enfeebling Arrow, the DC is 8+PB (proficiency bonus)+INT. But that is only for the effect of the arrow, not the damage bonus, which applies regardless if the target makes the Save or not.
I guess the real answer to the OP, is the best way to scale the damage of Arcane Archer is just to keep leveling up as Fighter to get as many Extra Attacks as possible. However, Arcane Shot itself is part of an Attack Action, so you can't spam all your Arcane Shots in one turn.
You might pick your Arcane Shots as part of an Attack plan like this...first arrow is Seeking Arrow and possibly applies Faerie Fire. All your subsequent attacks get Advantage, which is awesome if you also have the Sharpshooter feat. Same idea goes for Shadow Arrow.
Grasping Arrow is perfect for kiting because the target moves slower AND they take significant SLASHING DAMAGE when they move. Very few things are resistant to slashing damage.
The Arcane shots are more about utility and versatility, or applying damage types the target might be weak against or at least not resistant to, rather than massive raw damage.
