... you can definitely avoid Gale's romance whether Tav is male or female, check his Romance guide at bg3.wiki, like all the other romances you can and might miss it .... and you did.

Hitting spacebar at light speed is an option to play the game ... perfectly valid.
But if you're warping through the game's dialogue menus so fast you totally and obliviously failed to notice that you just clicked on telling Gale your undying love for him ... please don't be shocked he reacts "romantically" to you later .... it's on you, not Larian.
What could have possibly gone wrong?

In act 1, you can manage easily enough to have high approval just by giving him the magical items he wants. That triggers the 'magical demonstration' scene where your Tav can express his/her interest to more intimacy
In act2, there's this night cutscene under the stars when you can engage into a relationship.
But this won't occur if you are already engaged with someone else (flirting with someone else is ok i think). That's the most probable reason in your case.
Maybe there are other conditions that can lock you out of this cutscene.
Of course at some point you have to pick up the propper dialog options to trigger a romance, but these are more than obvious. If you say 'no' it's a"no"
I had to read a guide on how to get the Astral Arachnogale Gymnastics scene. Worth it for the laughs, though.

Misinformation. The lead up to the actual romance sequence where he beds you or where he just hangs out talking about his feelings about it potentially being his last night to live start the same way.
No longer relevant because it's been patched for over a year.
And no, I never played Early Access.
So I'm not saying people are wrong that claim Gale acted "different" in the release version of the game, but that appears (despite what some claim) to have been a bug, and NOT intentional.
In any case, it seems to have been fixed in early patches. I never saw this "other" version of Gale.
