Of course this only matters if you're soloing, because otherwise a party with 3 origins can still perform better. The only thing is that it gets annoying going through combat and controlling 10+ summons individually. Fun for a bit but then gets old.
Summons are more used as an extension of some casters DPS or utility output. Casters dont usually get multiattacks / extra actions like martial classes do, outside of multiclassing or Sorc metamagic.
This is the way to get that extra edge and bring them to balance with your companions, but they hardly become powerful on their own
Straight up scaling their stats? no. However there's certain class perks that will buff their use. Or in the case of necromancer upcasting raise dead for extra targets, or spores increasing the count of summons you have.
Or as you get higher in level you're able to summon more powerful beings, like eventually you get Elemental instead of minor elemental, and then you get Myrs.
That's about it
So they end up feeling really weak by the final battle , and let’s not forget Withers who can respec the characters for free so that they can always optimize their builds around the OP items .
Summons DO scale as in you can upcast your lvl 5 elemental to a lvl 6 elemental and it gets more powerful, but that’s about it
Having played as a moon druid myself in BG3, and usually it being one of my fav classes, i gotta say, even with LArian's crazy homebrewed magic gear, i was still pulling a lot of weight all the way to the end in our coop campaign. Once you get your 3 multiattcks, a Myr shaped Moon Druid also deals pretty impressive damage, and the fact that they can "tank" better than any martial class is a bonus.
Add to that the extra utility spells you cast before shaping, or an extra Myr you summon + dryad + wood woad dude, and overall they're still pulling a lot of weight even at Lvl 12.
It's a shame Larian forgot to add some of this OP gear for wild shape druid, but then maybe they'd get a little too OP to be honest
