it's actually neither a baldur's gate game from the start too. XD
There is tons of stuff like this in BG3, where your actions, or lack of action, has a big, meaningful impact on the storyline and blocks off quests/dialogues/gameplay or opens up new quests/dialogues/gameplay.
You shouldn't expect to see all content in a single playthrough, or to have things always go the way you want.
As per usual, BG3 coulda been a 10 but insists on never rising above 7.5

This. I cannot stress this enough. It is impossible to see everything in a single playthrough, so trying to be a completionist is a doomed prospect.
Your companion had a very time-sensitive, volatile request. You refused it. He left. It is what it is.

Delete your old quicksaves. It's a total of 50, so as you go get in a habit of deleting 20 or so quicksaves as you go so it doesn't get annoying, and you have 50 Qs's at your disposal. Hope this helps.
