She kidnapped Lae'zel, which my DU drow considered essential in his plot involving a certain hammer. So however much he hated it, he went to kill Gortash first. From all the companions, she kidnapped the key one (maybe except for Astarion and SH, which were quite important.) I remember I was so afraid she might kill Lae'zel that I did not even rest between the tribunal and the fight with her. After a successful check, she left her alone and L. survived.
I had talked to Gortash but refused his offer and left. I did nothing else with his story and I went gear hunting and finished a quest or two before I finally confronted Orin. Gale was still alive and laying on the alter, I passed a speech check and he was saved. I then cast Ice storm and it killed him anyway..so.. Fun fact, they cannot be revived. This is a permanent death.
It's another "false urgency" situation. You have as much time as you need to reach her and save your companion (if you want to).
BTW, Orin will kidnap one of four possible companions: Gale, Lae'Zel, Minthara, or Halsin. If she doesn't kidnap one of those 4, she will kidnap Yenna, your camp's soup kid, instead.
In BG2, Bodhi would only kidnap your romance partner (if you had one and if they were in the party -- leaving you a perhaps important one person down in the resulting fight). I think when Larian was making BG3, they decided to go the opposite direction and only kidnap someone they were reasonably sure that people wouldn't miss too much.
