Maybe a screenshot of the CC? If you have photo mode then that kind of rules out accidentally running older versions, unless you're somehow forcing an older test version that included it, but seems unlikely.
Also, for anyone stumbling here unaware after, keep in mind that only Warlock, Paladin, Sorceror, and Cleric are available right at level 0/1 (CC).

Also, if you're using mods... then for all anyone knows those may be broken until updated (if ever) so a possibility; and if it's a mod issue causing issues with subclasses, then you'll need to wait or go vanilla.
Edit: Nevermind, OP states mods installed. Obvious first step is to disable/remove them from the mod directory and boot up vanilla and see if it works.
Same issue here, I've done some testing and so far I can only conclude that any and every mod that is not managed directly through the in-game mod manager gives me the issue.
It does not matter which mod is on, the second it's installed the game is f*cked (I mean the subclasses won't appear) and uninstalling/disabling the mods isn't enough to fix it, I have to completely clear out my player profile for it to work again.
I'm using minimal amount of mods to avoid such issues yet here it is. I'm kind of confused as to what could be the problem as I've never faced anything like this before. Usually any issue I had I could fix by de-activating/uninstalling this or that mod but now even that's not enough.
I had suspected Vortex to have an influence in and of its own but without any mod installed I can launch the game through it and it's working just fine.
I have a hard time believing that somehow every single one of the three mod I'm using outside the in-game mod manager independantly causes the issue yet it's the result I got so far, so I'd be more inclined to think that outside influence causes the issue in and of itself.
Anyways, any help would be greatly appreciated.

1 ) Take your save files ( C:\Users\User\AppData\Local\Larian Studios\Baldur's Gate 3/PlayerProfiles/Public/Savegames ) and set them aside ( on your desktop or whatever );
2 ) Disable steam cloud saves (for BG3) through steam properties;
3 ) Delete the PlayerProfiles from the pre-mentionned BG3 folder;
4 ) Launch the game with your mods as usual.
Once you boot up the game again, it should create a new clean profile, make sure your mods are activated in the in-game mod manager and check if the subclasses work by starting a new game.
Once that's done, you can then take your save folder back into the PlayerProfiles and it should work back as usual. At least it did for me.

Thanks for posting this! Were you still getting the data mismatch errors the whole time you were troubleshooting, and did this fix make you stop getting them? Just wondering if I should expect to stop seeing the data mismatch when i get a fix that works, or if I have to keep going all the way into the game and checking on a character.
