Karlach. Her ending is sad yet wholesome, but most of all the reactions of all the other companions, including Minthara, were surprising when they address you as Karlach directly, leaving me stunned at multiple occassions after dialogues.
Playing the other Origins after knowing their stories just didn't have much impact then.
