- Sorcerer offers metamagic, wild magic sorcerer and the luck-bending / surges make the combat a little less dull.
- Wizard has a ridiculous level of customization in terms of the toolkit.
- Bard is extremely versatile.
Really, it's any spellcaster except for the warlock who's as dull as it gets, in part owing to being implemented like ass (only the Blade warlock works as it's supposed to in the rules, and it's the most boring subclass out of the three on offer...).
From a purely 'This is fun' Point of View: Bard. Having a +9 to Persuasion rolls at Minimum. Being able to get items from shops at a 43% discount and having great unique dialogue Options Like killing the mood of a Bugbear Plowing an Orc has earned many a giggle from me during my playtime.

Open hand monk with the extra bonus action from Thief.
A dual crossbow character in a ranger 5, fighter 3, bard 4 kind of way.
Great weapon master paladin.

frost eldritch knight variations(maybe later switched for bard for banishing smite, or having one in the party)
Fair, balanced, interesting mechanics and lots of extra stuff that fits into the story
at the end of all that, open hand..
you are doing your unarmed damage die (think it changes with level), twice your str bonus (+8 at level 4 generally), d4+wis bonus (level ? 5?), and a d6 'element' damage (radiant, necrotic, and maybe force(?) ) before adding in anything like the ring of acid or gloves of fire (creche area). And the TB feat is also adding +8 to hit die rolls at level 4! You almost never miss while punching out 20+ damage over 3-4 hits every round (and this goes up at higher levels and full gear and buffs etc). 3 levels of rogue for a second offhand rounds it out.

fun for me is anything with at least some magic. Wizards have the most variety there, as they can learn more spells. The part-wizard fighter and rogue or wild magic barb are not caster enough for my tastes (only level 2 spells) so not recommended on those. Stuff like a monk, with no spells, do the same thing every fight... throw javelins and such until they can zerk in and punch stuff every round.
How could transforming into whatever you want/need, not be the best way to handle a problem?
