Been a while since I read that question (yeah, someone in the past asked the same). So it might be not so easy to dig that up. Instead here is the answer you are looking for.
a) Each character you/your daughter are creating gets a separate campaign slot. They will be shown together in a list where you choose the character from, but you do not have to worry about affecting her save game in any way, unless one of you decides to delete the other's savegame for whatever reason.
It results only in an extra step when you switch players, you should not use the continue game button but instead load and pick the character you wish to load the savegame for. So much about your worries.
b) The savegame folder is Windows userprofile folder dependent. Which means: it does not matter how often you reinstall or how you reinstall the game, it will always access the same game folder.
If you really wish / need a separate game folder for whatever reason, the best course of action is setting up a new Windows user on the PC. That way you get a clean separation of userdata. On the secondary Windows user, you do not need Steam to be installed. Just launch the executable of the game directly from its folder and you are good.

The goal point(if possible is to have my games backed up) in the steam cloud, but not available to her on her computer. And the same for her(her save games stored in her steam cloud, but not available on my computer).
I have turned off the 'steam cloud' setting 'keep game saves in the steam cloud for BG3. But her save games are still persisting on my computer.
The whole family sharing is a temporary condition anyway until I can save to spring for my own copy. (Hoping it will be on the upcoming turn based RPG sale)
