I'd like to remind everyone that using a mod manager is important. What's perhaps more important is people knowing that Improved UI and Modfixer CAN'T BE DISABLED TRADITIONALLY. Even if you have a mod manager, those .pak files in the Appdata folder (which is why nuking the folder "works") will keep running because they override the game directly. You can delete them, update the BG3 modlist (yes, this is a seperate thing) and then try again. Alternatively, because the problem might be with all the updates vs non-updated mods, you can just "disable" those mods by... changing their file extension. Granted, you still need to update the modlist, but now you don't have to do a complete reinstall of the game and mods.
I unfortunately cannot tell anyone if ImprovedUI is still working, I've literally just sat down and fixed THIS issue on my end, writing this so people don't spend a fr*cking afternoon or so reinstalling the game. What I can say is this: make life a little easier on yourselves, and potentially others if you give them advice, and be organized. Don't run for the uninstall button unless you've actively modified base game files directly. Usually mod managers allow you to treat mods like "plugins", unlike ye olden days when you did modify the game files. But please be aware of how your mods change your game, not all mods are created equal.
People could just use their backup.

The mod is outdated with patch 7. Even though I had it disabled it was still giving me the UI text box issue. So I deleted the "Customizer" mod completely from "C:\Users\XXXXXXXX\AppData\Local\Larian Studios\Baldur's Gate 3\Mods" (the XXX's are your computers username). Once it was gone I downloaded the updated version and it fixed everything.
