I've given the ones in the workshop a shot. My thoughts on them are:

Gensai: Neat aesthetic, no game breaking abilities, but also nothing that exciting to play with. The tooltips for some abilities seem to be broken but as far as I can tell they work fine.

Imp: A lot of work has gone into this one and there's a neat unlocking of abilities as you go up the levels. Some of the abilities are potentially gamebreaking (Infinite invisibility) but not in a passive way so you could show some restraint in using them. Sadly it also unavoidably gives your character five extra levels when you create them for no reason.

Kuo Toa: Its face makes every cutscene hilareous and worth the price of the admission just for that. The opportunity cost of using an action to trigger it's three abilities, pincer, net, and bloodlust means that they'll be useful and quite possibly overpowering in the early game and almost certainly not worth the trouble later one. It'd have been good to see some of them as short rest abilities that scaled with level. Also no good for a balanced play becasue it gives +1 to every attribute.

Astral Elf: More or less follows the RAW, has a cantrip, a rest limited short range teleport and the ability to gain a boatload of skills each rest (pick an attribute, get proficiency with all skills of that attribute). While the skills make it more powerful than other races, you were going to have someone good at each skill in your party anyway so it probably won't upset the balance of the game too much.

It's a shame that the merc creator doesn't have the ability to make fully custom mercs so any race mod needs to be your Tav or you can't have it at all.

Classes wise:

Celestial Warlock: Divine flavoured warlock with a few healing spells. Kinda neat to have as an option, still only has a couple of spells per rest so the wider selection isn't going to break your game. Unfortunately it's bugged such that all warlocks (not just celestial ones) lose their +2 and +1 to attributes. I guess you could play a Kuo Toa Celestial Warlock and the screwy attributes for both of them would kinda cancel out.

Mystic: Wow. Someone implemented the unearthed arcana mystic and it's kind of incredible. There are dozens of new abilities and a host of different ways to play the class. Of course unearthed arcarna is playtest material so these abilities were never fully balanced, but there are so many to choose from it'd be easy enough to work around anything too wonky. The effort that's gone into this one eclipses all of the other mods, well worth a look.

It's a shame that we're not using steam workshop so there can be comment threads on the mods themselves that give you some idea of what they are or how they work before you install them. I don't really mind when games don't use it and have their own interface, but when they do I think it hurts when it's not as functional as the one it's replacing.
