Theoretically the cache folder you are supposed to empty should not vanish, as the download gets put in a completely different location altogether.
But - applying the patches after patch#7 might have cleaned them already for you.
It is always a tad of a hassle to rollback, but at least you can be safe that the rollback version will not autoupdate if you follow the guides mentioned above.
Personally I prepare before every patch by just making a backup copy of the game, so I can rollback easily without the need to redownload

I recommend that to everyone, regardless whether with mods or not as it saves quite a lot of time and nerves restoring the game. ESPECIALLY when mods are involved.
First off, I'm on a Mac. I upgraded to Patch 7 but it is simply unplayable if you're used to mods for a while, the number of useful in-game mods is ridiculous (like 3 or something and no Immersive UI?) and a lot of the Nexus mods I use are not yet upgraded. I did basically kiss all my savegames goodbye. So I rolled back to the Patch 6 Beta which is a total disaster on a different level. Here, I can't even load the savegames because they have the Hotfixes which the beta obviously hasn't. And new games can be opened but get stuck at the first die because the die doesn't work, at least not for me.
So, I used your guide to install the Rollback to the latest working Patch 6. I followed the instructions to the point, deleted all the caches, and no, I don't have ANY mods installed either. DL took 10 hrs btw, continued through 3 short internet outages even, worked like a charm.
I tried to start it from the location it loaded down to but I only get a pop-up "Verifying Baldur's Gate 3" and I'm now stuck here for hours, even now. It doesn't say anything else so I don't even know what it is verifying exactly and with whom or with what. I'm used to start the game directly that way btw, offline without opening Steam, never had a problem with it before.
Now I wonder: as the currently Steam installed Patch 6 Beta is totally useless anyway, wouldn't it make sense to download Patch 7 anew, just the regular way from the Steam library? Also, before doing that, maybe move the new rollback Depot folder to an external drive for the time being to free up disc space? I would then move it back once Patch 7 has been installed and tested and try again.
What do you think?

First thing first: 10 hours is quite a number. As the game does abort the download when the connection is lost, it must be quite the relieve when you finally saw the confirmation of the successful download.
And yeah - while there are people promoting the beta participation patch which has been introduced with patch#7, it is clearly not the last one before the latest. Whether for Mac or PC. People tend to miss that detail for whatever reason, hence I always go by my guide as it gives me full control about which version to download.
A lot of people have written that the latest patch on Mac works just fine - provided they have the latest version of MacOS. Personally I cannot tell how Mac works in that regards, as in why some people do not upgrade their MacOS. Until the issue is resolved there is a high chance that the game in its latest version will not run correctly unless you also have the latest MacOS version. That is why those players are successful by just dealing with the usual launch troubleshooting mentioned here

so you would need to assure that you have the latest version of MacOS.

Under Windows you would just run the Baldur's Gate 3 application from the download folder, no problems. And you did nothing wrong either by your description of trying to launch the app directly with exiting Steam before

There should be no problem either in moving the rollback version on an external drive. Technically you should even be able to launch it from an external drive as a portable app.
In theory, once you got the rollback version running, you should be able to use your mods setup from before again. I would still want to try to salvage that.
Just to avoid misunderstandings, could you share the command you used for the Steam console? I know in Windows you need two depots, while in Mac only one. I just would like to make sure you got the right one.
Post Scriptum: You did whitelist the game/app (rollback version) Settings>Privacy&Security>Full Disk Acces yes?
I looked up the possible causes for those endless verification things and it seems Mac tend to have such issues with several approaches.

But you said "do not quit Steam or you need to start anew, it will keep downloading after disruptions" and I didn't quit and it kept downloading and voila!
Yep. That looks perfect. With that you have correctly the Mac version before the latest update. Just need to get it running correctly.
Was there no depot download complete line?
Yes, in security settings it shows as whitelisted the one in the depot folder, the one that would try to verify. It doesn't give me an option for the still installed Patch #6 Beta, though but that's maybe because I didn't open that one yet after the latest restart.
Weird. But the "workarounds" I have read for that are also weird, where some Baldur's Gate 3 players mentioned they had to terminate the verification progress a few times before it works.
In Windows that would be a PC restart / via taskmanager. Not sure if this can help you

from how I read it, it would be logical that it helps after a restart of your Mac. But I would turn it on again if it does not work, to be on the safe side.
While Baldur's Gate 3 is safe, especially since you downloaded it from Steam, it is always a risk running apps without that sort of verification.
Yes, there was. It's the one that starts with "Depot download complete ..." in my post. I wrote it in here from a screen shot, the three lines were actually one long line in the console.
So, major surprise here: the launcher JUST opened, kinda like out of the blue because I had closed the verification notice pop-up. But I did not (force-)quit the app, as I did yesterday. I'm not quite sure now how long it actually took but it must have been at least 6 hours.
I won't launch it just now, though because I really, really need to walk the dog and I'm kind of exhausted tbh. But I'll keep you posted, maybe my experience will help others.
