Minthara in the goblin base have spidersilk armor which is a REALLY good light light armor.

Alternatively you can buy Graceful Cloth from Lady Esther in the mountain pass.
https://baldursgate3.wiki.fextralife.com/The+Graceful+Cloth+(Cat)
While its only cloth, its abilities is extremely good. +2dex , plus 1 dex saves, highened jump distance and -permanent- cats grace. Cats Grace gives you advantage on all Dex checks, which includes Sleight of hand. meaning you no longer need to use the gloves that gives advantage on sleight of hand.
Give Astarion an additional dagger. Put him in stealth and look to reach somebody to backstab them. Hold shift to preview sneak cones. Alteratively give him a longbow that you also can sneak attack with.
Also make sure you pay attention to all the magical gear. Some of it can have some good synergy with him depending on if you keep with this default build or customize him.
in act 2 you MAY randomly get a vendor with studded leather + 2, 14 AC which is as good as it gets. By then you are expected to have a 20 dex on a LA user, pulls it up to 19AC without anything else. A tanky character by the end of act 2 may have a 23-25 AC, for reference, without buffs (best armor +dex for the char, shield+3, weapon +1 is possible, feats/fighting style +1-2 possible).
Respec... there are many possibilities. Fighter 1-2 levels gets you ability to use any weapon in the game, any armor and shield, fighting style (+1 ac if nothing else looks good), self heal and action surge .. its a decent investment for ANYONE to take 1-2 fighter levels initially and the rest in their real class(es). Fighter is one of several options, of course, its just that fighting style and self heal are high end vs some other ideas.
there is at least 1 medium armor that has no dex cap, and is probably best AC for a rogue hybrid or racially enabled medium user.
The game is all kind of balanced around giving light/no armor characters full DEX bonus (typically +4 for a DEX-based character), medium armor characters only a max of +2 for DEX, and heavy armor character nothing for DEX.
The idea behind the rogue is that they are supposed to stab and then hide, stab and then hide, etc. They don;t have lots of armor because they are supposed to be sneaky and not just stand in the open and take hits.
Combat wise they aren't as good as some other classes offensively. You do get some nice defensive reactions to mitigate damage or avoid damage all together, you also get some nice skill based abilities to use outside combat which some other classes do not get. More proficiency to skills and 4 feats like Fighter.
Sneak Attack will proc when possible even if using a bonus action attack. So you can use your bonus action for the Sneak Attack and then the main attack for something else like a spell, cantrip, scroll, special arrow, whatever.
I think Rogue provides a lot of versatility both inside and outside combat which not all other classes can provide. As such they aren't as strong in combat unless you find ways to get crits or pierce vulnerability to double or triple your Sneak Attack damage while using Savage Attacker for re rolling dice with melee Sneak Attack.
His main melee weapons will be daggers, rapiers, and shortswords. Magic daggers are a dime a dozen and you can find both a +1 dagger and a +1 shortsword in the abandoned village near the start.
