Got anyone with Sanctuary? You can cast that on your party to escape, then regroup.

I don't even know what that means. Is it some DnD slang? My party is Karlach, Laezel, Halsin and a rogue, all at level 9. Halsin can cast hold. But am I correct to assume that such spells won't work once the boss is buffed?

I did, and it wasn't helpful. Without indepth knowledge of the game, I have no idea what is going on.
Some basic, general tips would be appreachiated.
Only focus Sarevok.
Hit Sarevok until he's dead, I tend to not use "Spells" other than wizard blizzard, I feel like physical dmg do more reliable damage.
Ignore the 3 adds.
Make sure you have great weapon master trait and a two handed weapon on both Karlach & lae'zel and items that help negate the penalty, Use reckless attack with karlach to have advantage,
I've never played druid or rogue that high level.
But for druid i would go Circle of the moon with tavern brawler feat and ownbear form.
I dono what a level 9 rogue can do, i only tend to use rogue for the extra bonus action in multi class
You are playing rogue correctly then.
It sadly is best as a multi class dip and isn't really worth going beyond 5 in it ever.
Different games use Different stuff.
Here you have to have gear builds and stuff enough to go through the enemy's defenses,
A Paladin can deal a lot of damage to him very quickly, especially if said Paladin has the illithid power that give an automatic crit per long rest, AND the ring that gives an auto crit after killing a creature per long rest (kill something before attacking Sarevok). (also that ring that allows you paralyze a humanoid target if you CRIT per long rest).
Also if you are playing a "bad guy" and became an unholy assassin, you'll have access to an awesome armor that gives creatures within melee range vulnerability to piercing damage, and this can be deadly lowly humanoids like Sarevok.
If all else fails, follow the way of the cheese, and end his life with explosive barrels.
This is neither Dark Souls nor Elden Ring or any Souls-like. Why come to a different game, a different genre, a different system entirely and expect it to work the same? That's like expecting Tekken to function like Devil May Cry just because they both have combos in it.
Have you ever right clicked on an enemy and selected examine before? The game gives you complete stat information on everything and tells you about this function on loading screens, and I am pretty sure a tutorial popup brings up this information as well.
You're supposed to review enemy stats then plan accordingly after figuring out the attribute spread, their passives, and their gear traits. Some even snitch on what Class the enemy is running as.
Still didn't say your build setup (gear, classes) because telling us you have Karlach, Lae'zel, and Halsin means little since for all we know you could have made Karlach into a Sorcerer, there is multi-classing, etc. Even in the case of just keeping them as their started classes, still doesn't say what Subclass they are as that changes things.
Karlach as any flavor of Barbarian is just rushing Sarevok and smacking him. I would suggest going in and changing your reactions for Reckless Attack to "Ask" first so that it only triggers when you actually need it to hit rather triggering on all hits, even ones that aren't required.
Lae'zel, more-or-less same as Karlach, bum rush. If she is Battlemaster, depends on what Tactics you took. If you got Menacing Strike, use that repeatedly until the guy becomes Frightened as that gives disadvantage on all of his attacks. Do not use Disarming Strike, he cannot be Disarmed.
Halsin, Cast Create Water to soak Sarevok and then when Halsin can, use Call Lightning or down a Potion of Speed on the same turn so he can use Call Lightning the same turn. Keep blasting Sarevok with Call Lighting for double damage, even if he only takes half damage from a Saving Throw, that damage gets doubled.
