Report a translation problem
A big reason is that there are no sorcs and bards origins, the 2 classes I play the most (if we ignore durge)
I once started a shadowheart playthrough, and a gale reskilled as monk playthrough, but ended up going back to tav anyway, because...dunno I just got distracted, I guess xD
It certainly depends on what classes interest you and what speaks to you the most storywise, so it's hard to answer for you.
For me it would probably be something like
Shadowheart/gale
Astarion
Wyll
Lae'zel
the rest
Durge
Durge last because Alfira...and I don't like the knocking her out exploit to save her life...:P
Karlach
Dark Urge
Gale
Lazeal
Shadowheart
Astarion
Wyll
i tried a few origin starts, and was disappointed that none of the dialogue changed. at that point i concluded you are supposed to play as durge, WITH the other origins as companions, and experience their stories from 3rd person perspective. You get to experience the entire story that way.
later i also learned about the expanded party limit mod (and enhanced tactician to balance the difficulty for the new liimit). playing with a 6 character party feels like the way the game is supposed to be played (in terms of story because there is more chatter and exchanges between the party members and with npcs. You can play with even more but i dislike that the left side portraits don't all fit at 7 or more. so i stop at 6 characters :).
By experience, his story is in my opinion not as appealing as the others. His reputation of being a boring character is kinda true.
Also consider which you want to play good / evil as they can feel quite different too that way. Wyll included.
The later they are in the list, the more likely you end up playing them with the new subclasses as sort of motivation boost.
You could also consider using the known workaround for having two origin avatars in your party. As long as you are fine with giving the ending to one of them, it is a good way to enjoy multiple origin stories side by side.

Then do them ALL over again, but with opposite choices. Wyll has the most fun playthrough if you play him evil.
But OK.
Lae'zel: You get a new character! Temporarily. He dies, though. But it does give you an early set of githyanki armor, which is nice. Interestingly, I failed a lot more of the githyanki dialogue checks playing as Lae'zel than I did when I just allowed companion Lae'zel to autopilot through them.
Shadowheart: Massive amount of new content, really. Shar talks to you. A lot. One downside -- you have to explore the beach by yourself. Probably best to avoid fighting the intellect devourers until you get an ally or two.
Astarion: Can do the bloodsucking thing from the moment you hit the beach. I assume the interactions with Cazador are different too, but I never got that far because I don't like rogues and I don't like Astarion.
Wyll: Mizora talks to you. Some. It was "eh" for me. I didn't go too far with it, so maybe it gets better.
Gale: Tara joins your camp. She brings you a nice ring to eat, which you probably should not eat because it is pretty nice. You have more agency with Mystra, and you can get a bonus 3rd level spell slot by taking in some of the Shadow Weave. All in all, not too bad really.
Karlach: I don't like barbs and don't really like Karlach and I didn't get very far with this.
Durge: "The way the game was intended to be played!" Just kidding. Lots and lots of new content -- most of it stuff I didn't want because I like playing good guys better than bad buys or tortured antiheroes who wish they were good guys. If you want to lean into the whole thing though, like cutting off Gale's hand or eating dwarf meat, it would probably be fun. If you are into that.
