It is a really nice way to play the game more to your liking. And for a large number party group, I did a run with 4 Circle of Spores Druids. Running around with 24+ members in your group makes for some hilarious fun combat.. Nice change of pace.
So, to ACTUALLY answer your question, instead of giving you a link that has nothing to do if OTHER PEOPLE use mods to make the game easier.....
Yes, I use the Party limit begone (Not because I want easy mode, but because I like having more options. I don't like the restriction of ONLY 3 other characters, I'd love it if my OC had been captured WITH a companion for example :) )
The level 20 mod I use alot, which is "technically" easy mode, since you level slightly faster, and have access to more levels, items, ect.
Generally though, you shouldn't be worried about if other people are using mods to make things easier, if YOU enjoy that, then do it, and to hell what everyone else thinks :)
On a side note, the installation i s SUPER easy with the built in installer, but a word of warning, if your not good at installing mods, then pay attention to WHAT your installing. Example, if you install multiple hairstyle mods, your game might break. If you want to overlay mods like that, pay attention, keep track, and if the game breaks, remove what you just did XD
Read mod instructions carefully if you want to attempt to mix and match, though (well, read them always ;)).
Play however you want, unless you're playing with a group in which case you should probably get a group consensus first, ha.
(However, it only shows you what is approved for your platform, which if you are on a Mac is strangely far less than should be, but that is a separate subject. (You can see them ALL on the mod.io website or baldursgate game mods website. If you don't install from the in-game browser/installer, you will need a separate mod manager.))
The new one is called Party Limit Adjuster, and I will add it adds some really cool 'spells'. One to trim your party to 4 at any point before resting or before certain events (i.e. getting on a certain Grymforge boat) that could otherwise make your game bug out. It doesn't even let you LR without trimming your party down to 4. By default, the max party size is 16, but you can set a different cap. There is no real reason to lower it, but I always run with a group of 6. Beyond that, party management and difficulty get ridiculous, and you're constantly scrolling to see everybody. It just seems "natural" to me from other games. You may want to get its counterpart Tactician Enhanced (same author), IF you want difficulty to scale with party size.
"Choose your stats" is still around and Patch 7 compatible, but is over at Nexus only. Can't get it without an external mod manager.
In-game, you have the Cheater's Scrolls (used to be Cheater's Ring, now converted over to a container full of scrolls with cheat spells). There isn't much you can't do with those cheats, including adjust your stats and XP (now has drinkable potions to do that.) It has full god mode cheats, and some of course a little less than that, LOL, like when you just need a little tweak here and there.
It and Esther's Brilliant Acquisitions are your two key ways to get the game's inaccessible items (In the files but not implemented in game), which include some items like the Scarab of Protection.
One other note. You will NOT level faster with Unlock Level Curve, it only lifts the cap from 12 to 20, if you don't get an XP progression mod (it has counterparts for that), you level at the same rate as usual and will probably not hit higher than level 14-15. Again, the progression mods range from slight to insane, like you hit level 20 in Act 1. Please note, there are only a tiny handful of spells above 6th level in the game (and need other mods to acquire) Also,, but you CAN upcast SOME spells to lvl7-9. Also, honestly, particularly some mod classes and subclasses only get iconic abilities in levels 13-20.
Just as one example, the College of Spirits bard gets to finally choose their Tale from Beyond instead of getting it randomly ... but only at level 14. (A homebrew change, but one I really like.)
Also ... unless you get a fix which is not so easy to obtain at the moment, Unlock Level Curve will nuke all your Druid wildshape forms.
Oh, and one other thing, the in-game mod browser kind of sucks. The font is barely legible and a lot of stuff is really hard to see. Makes it extremely difficult to view the mod's images, description, comments, etc. For that reason alone, you may also want to browse the mods instead at the mod.io website from your external browser. As I've said, I'm personally doing that anyway for other reasons, too. For reasons I don't understand, Mac approval has to wait on console approval for new mods or updates, which is glacially slow, so the "approved" list is way smaller than it should be and is all you can see from the in-game browser.
