No need to feel sorry for her, she's NOT worth it.
You can save Mayrina, but not her husband. He will always be a zombie. But in the end, you will be doing a good deed if you visit Mayrina in the Undercity (Act III in the City of Baldurs gate) and free her from the voodoo spell that the Vettel has installed on her. She'll thank you later. :-)
Ethel will get another child later and you will have to free it and defeat Ethel to complete the quest. However, this is independent of Mayrina if you free her in the teahouse first.
And yes, unfortunately The Sylvan Learning Center is right: As a paladin you are not allowed to resurrect zombies. Then you become an oathbreaker. But that's not a bad thing. Quite the opposite. I've played as an oathbreaker paladin. You don't really have any disadvantages ;-)
Eaten. The baby will also be eaten but the baby will then be reborn as a hag like Ethel. Fun times

More generally there's no helping her husband; he's dead. Withers could probably bring him back but he doesn't offer. However if you use the wand and give it to Mayrina you'll meet her again in Act 3 in much changed circumstances.
She is grieving and clearly traumatised, not evil. She was manipulated in her vulnerable state by Ethel, someone with centuries of experience of doing that sort of thing. Given time to recover she becomes downright heroic.
Vengeance Paladin can do it just fine.
