Have you tried just attacking everyone you see instead of talking?
It has a combat-only mode that let's you fight waves of enemies in progressively harder encounters. Doing so will net you random loot with rarity-based drop rates as well as a RogueScore and currency used to unlock powerful power-ups.
200+ enemies
38 maps
100h of new gameplay
Works in multiplayer too!
** mods not officially supported yet though so, you may want to wait till September when Patch 7 will bring mod support.

Still, there are story beats that cannot be avoided regardless, but there is the skip option during dialog. Use it if what the game was designed around is not your thing (which begs the question of why get the game in the first place).
Seriously....the Chosen and Bradford can talk for hours on end...
Just go play a different game.
EDIT: Okay, I actually found something for you. You're welcome. https://www.nexusmods.com/baldursgate3/mods/9907
