Heah, yeah, Talos seems appropriate for that. I have a halfling storm sorcerer/tempest cleric ready for a Durge run, should I someday actually manage to muster up the staying power to play the game all the way through ;-) And that one definitely venerates the Storm Lord, because, who else? (ok, Gruumsh, perhaps, if you are a half-orc)
Of course maybe just trying out a Mystra cleric just to see if Gale acknowledges that, or Selune cleric just for the first area, or a Lathanderian cleric/monk (clonk?) playthrough until Rivington could even if only for the amulet spirit could be fun (dangerously hilarious even). Or just a straight-up Ilmatari just to see if that makes any narrative difference in Rivington... there's just too many options..
There are a handful of gods that were removed from the game close to launch, and have dialogues tied to them that are pretty interesting. There are a few mods that add them back in.

Yeah, for odd reasons - more "cut evil" stuff - they removed the option to be a cleric of Shar or one of the Dead Three (Bhaal, Myrkul, or Bane) ... and there is definitely some dialogue and additional things for those options - as you might suspect - but these things were cut from release (but put back by modders).
