The ULTIMATE Astarion Build: Monk Ascendant
Class Build:

Monk 7: Way of the open hand subclass for main source of damage and must-have passives, take Tavern Brawler feat at 4

Rogue 4: Thief subclass for extra bonus action and ASI feat for +2 STR

Barbarian 1: For unarmored defense based on CON, which gives +6 AC

Stats:

Base: STR 17, DEX 16, CON 8, INT 8, WIS 13, CHA 12

Improved: STR 24, DEX 18, CON 23, INT 8, WIS 13, CHA 12

Items:

Helmet: Horns of the Berserker (+2 to attack rolls, +2 Necrotic damage per unarmed attack)

Cloak: Cloak of Protection (+1 AC)

Chest: The Graceful Cloth (+2 DEX)

Gloves: Gloves of Soul Catching (1-10 Force damage per unarmed attack and heals 10 HP once a turn)

Boots: Bonespike Boots (+1 AC and saving throws, increases jump range, and gives Brutal Leap)

Amulet: Amulet of Greater Health (CON 23)

Ring 1: Crusher's Ring (+3m movement)

Ring 2: Ring of Free Action (bunch of utility)

Other key buffs:

Auntie Ethel's boon: +1 STR

Bite Araj Oblodra: +2 STR

Vampire ascendant: 1-10 Necrotic damage per unarmed attack

Mirror of loss +2 STR

Without anything, you land 4 attacks per turn. Haste and Ki points crank that up to 8 attacks per turn. Each one hits like a truck too. Roughly 280 avg damage per turn. Consistently. You're welcome.

Before that point you really ought to use Sparkle Hands because it's blanket advantage with free +1 to your attack rolls which is RARE for unarmed attacks (85% of your opponents will be wearing metal armor, even a 50% chance to hit is 75% and you won't even need Ki to activate it).
- - Kushigo Boots are RIGHT THERE. +WIS to damage on a MNK is stupid. Don't ever use Bonespike Boots here, save those for an end-game BRB build or something. Or sell them, they're mid af anyways and most other boots you get before then are just plain better (Boots of Stormy Clamour, Boots of Aid and Comfort, Watersparklers, Boots of Striding, Disintegrating Nightwalkers, Hoarfrost Boots, Evasive Shoes, Springstep Boots, Helldusk Boots, etc.)
- - We really gonna talk about the fact you plainly overlooked Callous Glow and Caustic Band? On a class that gets 4-6 attacks per turn unbuffed? That's +8-+12 damage you're missing out on.
- - Same thing with Broodmother's Revenge, like you should be killing things before they have a chance to react, CON is NOT helpful for you at all. Give that health amulet to your WIZ who needs to make concentration checks.

- The BRB level is completely redundant. A Support should be able to give you on-demand phys resist at like any time - if you don't already benefit from Warding Bond.

- You can get a more even stat spread with 13 STR, 17 DEX, 12 CON, 8 INT, 15 WIS, 10 CHA. With the buffs you mentioned prior you should be able to hit 18 STR, 20 DEX, 12 CON, 8 INT, 15 WIS, 10 CHA easily enough, which is still +11 to hit with the aforementioned armor changes for 1d8+1d10+1d6+14 per hit, for 4-6 attacks per round, before Cloud Giant elixirs which will take it to 1d8+1d10+1d6+22 per hit. Assuming CGE buffs, that's an average of 142-213 damage WITHOUT HASTE, while holding an AC of 20-21 with passive disadvantage and a move speed unbuffed of 45ft or 13.5m (which is gonna be 55ft at base thanks to Longstrider) and a jump distance of 22.5m or 75ft.
