For a party of 'best' builds I really think this comes down to personal taste in playstyle, but there are a ton of posts online about party comps that synergise
Once you got those 3 the 4th guy can be anything. That's how I set up my team, so I can always swap the 4th guy out.
IRL you can't be everyone's friend, someone who tries to appeal to everyone appeals to no one
Truly a mystery.
Frankly it's not hard at all. Have 1 frontliner (Lae'Zel or Karlach), one lockpicker (you or Astarion), one support (you or Shadowheart), one caster (you or either Wyll or Gale) and one party face to talk to people (you or Wyll, or even Gale to a lesser extent).
But on topic from my own play, Shadowheart has really grown fond of being a light Cleric with her first level in Fighter to start out (then respecced later on).
Mobility is awesome, so oft times I drop a level of Storm Sorcerer in mobility-challenged tanks, so they can get in place, or onto the next target, even faster.
This is very early game stuff though, because gear to help every shortcoming is just around the corner in this game.
So I just play the character I feel like playing on any given day, but with 12 classes and so many sub-classes, even figuring out what that is can be a challenge.
There's no one answer, so it might not be obvious what works best.
suggestion:
start with bard, fighter, cleric, wizard
at level 5 switch to bard, fighter, sorcerer, paladin
once you get to 9+ many different setups work, with multi classing coming in as a good way to exploit combinations of abilities and magic items you have accumulated.
