I pretty much always use Shadowheart unless I'm playing a Tav cleric, but the game is viable with any of the companions.
If you assume Gale is going to be sitting at camp, then maybe play a wizard or sorcerer.

Just be warned that if you do a full on "indulge" run your camp'll get pretty empty and you lose out on a bunch of quests. You do still have enough XP to hit level cap, and you've seen all that first time through anyway.
At what difficulty level did you play? Tactician?
I'd recommend NEVER play on Honour Mode without such a radical change of character. Honour Mode is competition, efficiency, mathematical precision. It is play-to-win, not play to have fun and experiment (immo). In any competition you train before the competition. So, at least on a first run in Honour Mode, I'd recommend go with a setup you know and follow the same dialogue options you already know the result for.
Lae'zel - I didn't use her first time round that much, so will spec as a classic fighter I think.
Shadowheart - I stuck to her base class first time, so this time I'll either have her as a life or light cleric. Any suggestions?
Astarion - I really don't like playing with the sneak attack tactic, so I'm tempted to completely respec and restyle Astarion mainly just to keep his character and story but completely change his gameplay. How would you suggest to do this best? What class could you have him as, and using what tactics?
