Tavern Brawler Open Hand Monk / Thief, Sorcerer, Swords Bard with Arcane Acuity, Battle Master Fighter, Light Cleric with Radiating Orb

Lots of classes / builds are great with the right gear in Honour mode
Karlach 6 tiger barbarian/5 thief/1 monk with tarven brawler for a melee monster
(tiger barb gets their strength added yet again on melee attacks and a cleave attack that hits up to 3 ppl and applies bleed for 2 turns which adds up to 2d4 (after gloves) +15 on each attack with 2 main hand attacks and 2 off hand per turn)

Astarion 5 hunter Ranger + 7 thief rogue for my skill monkey dex build with sharp shooter.
(gets 2 main hand, 2 off hand attackers per turn with hand bows doing d6+10 each and an additional 4d6 sneak attack on first hit.
Also gets horde breaker to hit 2 people at a time)

2 ranger +10 light cleric for shadowheart with some hand cossbows & sharpshooter to let her shoot while buffing and healing.

2 storm Cleric +10 wizard for gale so he can alpha strike with lightning damage.

Wyll I usually have go 6 swords bard + 2 warlock +4 thief rogue then also go ranged (dont use him as much as he seems like an idiot to eager to die)

Laezel I usually go 6 eldritch knight fighter +6 wizard with the headband of int.

For myself either 2 or 7 paladin followed with some mix of warlock & or sorcerer.

On my next playthrough I'll probably change my build to be swords bard + warlock.

Edit I really wish they would also add back the ability to only put a weapon in the off hand (it really helped clerics and monks along with several other builds a lot to be able to do so)

I am kind of conservative. The only multiclass has been paladin 5 -warlock 7 on Wyll (tactician but the combo was quite strong) and my main on my current Honour run (I've just beaten the final boss but will continue with the goodbye party at a less hectic moment).

The build of that said (drow) character was 6 levels of a valour bard and 6 levels of a draconic sorcerer (strength based, str 16 or 17 and char 16 at lvl 1) It worked surprisingly well. It can use 3rd level spells (upscaled to 6th level, if needed), three metamagic abilities and two weapon attacks. If I want to save spells, I go melee. Against a lot of enemies, I go for AoE spells.

P.S. I've also multiclassed Minthara as a paladin 10 and fighter 2 but I saw little practical difference (in the final fight I did not even have to use the action surge).

P.S. 2 I am also involved into a multiplayer camapaign and there I am considering 10 valour bard and 2 draconic sorcerer combo. I like the valour bard for his skill proficiency and prebuffing with his bardic inspirations.

very fun to respec into after Act 2
Divination wizard, tempest cleric, vengeance paladin, xbow dex battlemaster. Could go abjuration over divination, both are very safe for honor mode. Portent dice are more fun for me. Strength fighter instead of the paladin would be better if you aren't crit fishing.
I like my pure fighter, warlock/fighter/sorc with potent robe etc. that just blasts damage, gloomstalker/assassin to win fights I can initiate almost by himself, and crutching on the pure life cleric just in case things get messy. Usually just run around with spirit guardians and bonus action spiritual weapon. Everyone has alert or uses the vigilance elixir until they get the feat

So karlach is unarmed i guess? :)
