However, Halsin and Jaheira have defaults. Halsin's default is Circle of the Moon, Jaheira's default is Circle of the Land.
The only way to choose something for them other than their defaults is to respec them at Withers.
Let me also add the hireling Danton I think has a pre-selected druid spec also.
When you respec a druid AT Withers, it reboots to level 1, and should get to select a new subclass at level 2, even if previously there had been a default.
Go Druid of the Moon. Best Druid.
Yeah, you don't pick your subclass until level 2.
every druid i get chooses subclass at level 3, and it is automatic circle of the land thank folks for giving me no useful information.
Are you using the guy at camp to respec? Do you have level 2 or 3?
I just rolled a hireling. Yes, it selects "Circle of the Land" by default and has a circle with a checkmark next to it on the second row on the Top Left of the Screen. (There are a total of 4 Circles - the first two have check marks, the third has a "!" to choose a cantrip, and the last is also checked for "Prepare spells 5/5").
CLICK THE CHECKMARK next to "Subclass: Circle of the Land" - that will pop up the menu with three subclasses, with "Circle of the Land" (outlined) and next to that is "Circle of the Moon" (not outlined) and then "Circle of the Spores". To change it, select the other Circle you want.
Even though those are checked off - you can still edit them at any time by clicking the Checkmark to edit. I recommend clicking the "Prepare Spells" so you can take the opportunity to edit the spells you have selected.

Click on the Circle of the Land and then choose a different subclass. It's the same with every companion and every class that gets a subclass after level 1.
The game will auto select a sub class then you level up but if you click on the subclass on the left on the level up screen you can change it to what you want.
Larian's support is usually responsive and quick enough. Their tools to do so are quite easy to use too. It's weird you have to wait that long.

Druids do not subclass at level 3, it's level 2. Always has been.
You are either not understanding how to change subclasses or you've got broken files. Verify your files with Steam, especially if you have never used mods.
When you respec;
Go to Withers.
Do your Respec.
Set your stats.
Press the level up button after first Withers stat screen is done.
On level up screen, make sure you click EVERY OPTION on the left, including the one that says "SUBCLASS" when you're on level 2 level up.
Pick Subclass.
If you cannot pick a subclass, your files are borked, either from bugging out (verify and/or reinstall will fix) or from mods you used before that borked your files.
