- Unleash and Walk through toxic poison Clouds, spikes, web, vines, mud. whatever. You are largely immune to Poison, & Difficult terrain issues. While your foes kill themselves trying to get to you. & of they refuse to come, Whip them over with the "Get Over Here" vine whip, lol
Oh, man. That's hard without any qualifying criteria, because there's a ton of good ones.
I guess for me, because I like building the supports more than the beatdowns, I'd end up going with either a straight-classed CLC 12 (Light) for debuffing, or a CLC 6 (Life) / WIZ 1 / DRD 5 (Land) for heals.

Light CLC is infamous for the Radiant Orb build. Basically, you get Luminous Armor and Stormy Clamour Boots in Act I, which lets you stack Reverb on procc'd conditions (Spirit Guardians, Radiant Orb, Guiding Bolt, Hunter's Mark, any condition really), and stack Radiant Orb in an AoE each time you deal Radiant damage. Then, you sidetrack over to Rosymorn and grab Blood of Lathander for a permanent light source (important for later) and Holy Lance Helm for on-miss thorns damage (which will be Radiant damage). Once you hit Act II you can grab the rest of the set which includes the Luminous Gloves, the Coruscation Ring, Callous Glow, and Thunderskin Cloak. Now you're stacking a minimum of 6 turns of Radiant Orb each time you deal Radiant damage, which will be all the time thanks to Callous Glow, and each time you stack Radiant Orb you also stack Reverb. Then when an enemy attacks you, their to hit will be reduced by their Radiant Orb count, making it easy for them to miss you, which triggers Holy Lance, which triggers everything else, but if they hit then they get Dazed because Reverb debuffs CON saves, which triggers Reverb.
In total it ends up being really good passive reflect damage, really good debuffing (-4 to phys saves and -6 to attack is harsh), really good chip damage because CLC, and surprisingly good spell efficiency (90% Sacred Flame chance never felt so hot).

Of course, if you want defensive utility then the 6/1/5 split is where it's at. Combining Life CLCs insane heal potential with the Wapira set (BG3's healer set), you can net about 15+ points of health each time you cast a lv. 1 Healing Word, with Bless, Blade Ward, and a pseudo Zephyr effect (able to avoid opportunity attacks). This makes for some surprising sustainability, as well as quite a lot of battlefield mobility thanks to the AoO avoidance allowing party members to reposition how they wish.

Barbs are not fun anyway :P you want real fun, go Monk and choose Way of the Open Hand. A blast for sure. Or Draconic Bloodline Sorc, but you used to play ranged so monk is the way
