You can start as many playthroughs as you want. They get saved by character, they can't be overridden.

I have like 4 playthroughs (separate characters with different classes) atm with multiple saves for each.

It's grouped per character

The saves fold into the character names. The last one you played at the top and so on.

No. You can only have one playthrough. Ever. On your PC. When your character dies Larian sends a kill command to your PC to delete every save file on your hard drive. Then it invalidates your steam key so if you ever want to play the game again, you have to buy a new copy.
