There are known issues related to mods which hampered the GUI which could cause issues related to that.
If you are not using mods try adjusting your character in the magic mirror, but before closing the magic mirror, wait for 2-3 minutes for the game to register the changes. Then try again.

A lot of mods users have shown in countless forums posts in the past that they are under common misconceptions when it comes to mods removal.

It is very important that mods user follow the detailed instructions of the mods authors in regards of installation and deinstallation of mods to ensure compatibility and functionality of the game and mods. Should an issue occur follow their instructions and in doubt consult the mods authors for mods related issues.
You can only be certain that an issue is not mods related if you confirmed it yourself by removing your mods completely and thoroughly.
Even a single file of 20KB caused a lot of grief for mods users since patch#6. Most mods user just ... missed it?

That is very unfortunate. I recommend strongly to contact the mod author about that. Otherwise who knows what else can break later on.
If you play with mods, consider using backup copies of the game to ensure compatibility throughout your playthrough.
