A lot of people do this regardless as their stat spread as they come is kind of questionable.
Even if you respec them outside their original class the stories can make sense in a number of instances.
Shadowheart could make sense as a paladin for her deity (her domain sucks anyway and most people change it)
Gale could fit equally well as a sorcerer as he says when talking to him that he was gifted with magic from as early as he remembers.
Astarion's story doesn't really place him as any class he just came as a rogue cause I guess they wanted a sneaky companion build.
Wyll's really only makes sense as a warlock but he could have been anything before he took that deal so feel free to multi class.

The only real solution I think is downloading a mod to increase party size and swapping them in as necessary. The times they'll get mad at you for leaving them behind is somewhat obvious.
The downside is not being able to pick up companions and also not being able to see interactions between them.
Their stories aren't really tied that much into their class.
Astarion could be anything, so could Shadowheart. I mean.. that's the beauty of D&D, you can sculpt your character however you want. You are not limited the way other games are.. like.. Drow can't be paladins because they are "evil" and paladins can't be evil. Or Humans can't be shamans etc etc.
They cannot be anything, because they're Origin characters, and thus they are predefined. It's totally Larian's fault for limiting the game to 4 characters in the party.
But what else should i expect from a developer who used the franchise to boost their sales and create "Baldurs Gate: Original Sin" rather than a sequel worth of "Baldur's Gate 3" name.
EDIT: OK, I think I got that this sentence is pointing out how other non-D & D games put in these limitations.
Anyway, OP,
a) consider using Party Limit Begone to raise party size to 6 ... then you can take 3 friends in MP and use 2 origin chars.
b) read up on what origin chars MUST be present for certain quests at bg3.wiki if you want to be sure to have them at the 'right' times
