Japanese vs American
I borrowed a copy of BG3 on the PS5 from my local library and had a thought related to the game version they had.

Long story short: The copy of the library's game was the Japanese version, which censors nudity and torture, meaning the depiction of tortured characters is lessened (like in The Goblin Camp or the sanitarium near Moonrise Towers).

Basically, I want to know if I can delete the Japanese version of the game I have on my PS5, buy the digital version of the game from the store, and play using the saved files I have in storage, without issue, since the American version has a few unique aspects the Japan version doesn't have (Genitals options in character creation, as an example), or if I need to do a full deletion of the stuff I have before buying the digital version of the game?

A good question, which has been also asked in the past. Unfortunately there was no feedback at all, so I could only tell you the assumption that it will not work, based on my experiences with savegames.

The reason is simple: the versions differ - ergo the savegame version will differ. It can work. It might not work. In the past every time whenever an incompatible savegame is tried to run with a game version unfit for it, the savegame will not work.
