The one I'm using just tells you to put the .pak folder into the mod manager and enable it by putting it into the mod order on the left ("install as any other mod"), depending what mods you are using, it might be a problem with your mod order, I recommend putting visual mods under class/race and library mods.
The one you mentioned[www.nexusmods.com] needs you to extract the zip file, then go to the data folder and drop the unarchived folder in there. However this mod doesn't seem to work as of recently.
So I would recommend using the most popular one "Half-illithid without black veins etc"[www.nexusmods.com] or the one I find reliable "Unvisual Half-Illithid"[www.nexusmods.com]. :)
[Edit:] I think I figured out the problem, for the Generated folder to be there, and anything to be updated though it, you need "Unique Tav". Which is a bummer because they didn't mention it in the requierments.
When it comes to changing the appearance of characters, like skin layers, the script extender and mod fixer is often needed, and, depending on the mod. I've got 100+ mods and all of them work just fine except one (Unlocked unarmed strike)
When installing mods you want to make sure to thoroughly read the installation (some of them say "to install as any other mod through BG3 Mod Manager" which means extracting the downloaded file and moving the .pak folder into the mod order), and check for any requirements, since most of them are dependent on other assets.
Unfortunately some mods are out of date and most likely a lot of them will break with the new patch that's coming soon, so keep an eye out for the ones that are more popular since they will probably get updated first.
