Is it possible to become OP in this game like other RPGs?
I've sunk around 30 hours in so far (now level 4) and a lot of the enemies are still hard AF. Like I'm in a cave now with a queen spider and she keeps producing more eggs. Jeez.

I also realized since no items in this game respawn and loot is limited, doesn't it mean players can technically never become 'overpowered' in the sense of tipping the scales of the game?

some experimentation required. hard to become 'overpowered' 'i.e. 1v1 everything' in the traditional sense. playing with friends who each maximise their own build helps alot. a lot of it through picking the right classes, feats and synergising them with your equipment

for sure, there are videos out there of people soloing honor mode with just one character, it's all about game knowledge

Many items are unlimited in the form of vendors, such as potions combined with partial long rests. (The free long rests in camp).

You can also steal unlimited gold/most non equippable items this way, although I would never do that unless absolutely needed as it kills the fun for me.

A big step towards becoming more op happens at level 5 in the form of extra damage dice on cantrips and extra attack fot some classes (and more.)

Yes. With the correct items, build and team combo, you can become insanely overpowered compared to all enemies.

Every encounter is soloable with one character if you have the knowledge, the correct items and the build for it.

On the flip side, if you lack the knowledge/understanding, you may struggle, and many fights may even feel impossible.

depends on what level youre playing the game at (adventurer,balanced,tactician) .I can tell you as someone that had zero experience with any Baulders gate game you are probably approaching the game wrong. The learning curve can be severe but this has quickly become one of the best games ive ever played.
This is NOT a diablo type game. It is a tactical game regardless of the setting you play at. So.. in a sense no, you never really out scale the content. You do gain a better understanding of fights,buffs,debuffs,advantage,disadvantage,spells,conditions, opponent weaknesses etc. and as youre abilities and gear grow you have more ways to apply these advantages. By the end of act 2 and especially in act 3 you do start to get some really good gear and youre player scaling (depending on class) starts to really ramp up but the enemies also get harder.
Theres a LOT to learn but if you stick with it youll soon become obsessed with character development,synergies,multi classing etc...its then that you start to stomp content

there are innumerable YT videos detailing some pretty broken builds

just go to YouTube and type in "bg3 broken/OP/godlike build" and you'll find scores of custom builds that will make you always crit, one-shot bosses, be impossible to hit, etc.

There is some OP builds in the game for sure and ways to cheese the game but if you want to play it more like a traditional rpg where levels matter more then anything else, Around the time you get to act 3 you're going to generally be steam rolling everyone and everything playing on balanced and below.

Short answer, yes. There are many builds/abilities that stack in a way that can become OP rather quickly. As others have mentioned, you can find many of these builds on youtube.

It takes a lot of game mechanic knowledge to become OP in this game. It's not as simple as grind to success, and it's also not as simple as "some builds suck". Perhaps the most valuable knowledge to have is an awareness of each race and enemy types' weaknesses, along with combat gimmicks for the engine to abuse against certain enemies.

After that you can start to worry about min/max designs and optimised chapter class builds.

30 hours in this game is nothing. At 200 hours you will be OP.

You can become OP in the sense of assembling a really strong build

You can't become OP by grinding or anything though, true - there's no option to just outlevel all the content like a lot of RPGs.

There's a lot of very, very powerful magical items later on.

The fact that you can completely redo your ability scores and level-up decisions means that you can also tailor your build to those items. Like, if you have access to an item which sets your dexterity to 18? OK, you could respec and set your dex to 8 so you can put those points elsewhere, or take fewer ability score increases and instead take more feats etc. Thinking of a multiclass combination that doesn't come 'online' until later? Sure, you can do that.

The strongest build is always a ranged one. Titanstring Bow adds dex and str to damage and you easily get str elixirs or the club of hill giant strength. Special arrows deal another 2d4 damage and later on, they double your damage or target up to 4 enemies. Combined with helldusk gloves and oil of combustion, grouped enemies just die. Just one guy has to use minor illusion to lure them together while invisible and that's it.

Not to forget the Bhaalist armor, that turns every enemy vulnerable to piercing damage in chapter 2, unless they are immune or have resistance.

I went Mountain pass at level 5 mundane gear one play through and nearly got destroyed. Did it level 6 with adamantine armour and trounced the encounters.

RNG is also a big factor.

I've had near TPKs on crypt bandits, gnolls, harpies, githyanki patrol, and said mountain pass guardians. It seems to happen when I get a run of bad rolls + not focusing on boosting defences. Oh, and at levels 2-4 in Act 1, or level 5 in Act 2.
