It turns out that theydidn't. :(
EDIT: To be fair, that conversation or any mention about it doesn't happen when playing Astarion origin. It takes metagame knowledge to know that about Astarion.

Better Gortash than Ethel.
That's a surefire way of making sure everyone mods her into their party in future runs.
She has the best character development and growth over time. The most emotional, impactful and memorable romance dialogue and lines in general. Best voice acting.
Especially when playing a Gith main. Her romance also doesn't feel like an accident or forced awkwardly upon your character since it starts pretty selfishly primal and Gith-like on Lae'zels part. That's until the "feels" get the better of her. of course :p :P
Even then it's cool how it manifests: "Well i'm becoming obsessed with you and can't handle my emotions, so now I guess we basically have to battle to the near death to figure this out!" which leads to some pretty epic romantic confession.
