try to use buffs that last until long rest and save your actual spells for difficult battles, as mentioned above, cantrips work just fine for zapping the weaker enemies , eldritch blast and firebolt come to mind .
it can get frustrating for paladin with such limited smites , but you usually keep them for the crits and dont just blaze smites on goblins .
i would say practice makes perfect and you dont always know at start which battles require that x factor .
However, the "you only have a limited number of spells you can cast" thing has been part of D&D since the very beginning.

Yep. I'd also like to add that the Spell Sniper feat allows you to use Eldritch Blast (or other cantrip) which utilizes that character's main spellcasting stat. It's a pretty nifty feat on spellcasters.
Unless you multiclass into Sorlock or Warcerer (lol).
D&D was designed around the gandalf/merlin/etc paradigm wizard who tags along giving history lessons and advice: in combat watching quietly while the guys with swords and bows take care of minor problems and busting out the big guns only when the balrog type encounters come along. For all the hype, in 5 or 6 books gandalf only uses magic a total of maybe 10 times, if that. Its not THAT rare for a D&D caster, but its close to that than the gauntlet arcade game wizard who casts 1000000000000 fireballs every screen.
Cantrips are supposed to be your replacement for the attack action so you don't have to use spells to deal damage every fight.
After about level 5 your casters have a good bunch of spell slots and you’ll have found a fair number of scrolls and Arcane Cultivation Elixers
First thing as a Sorcerer or Wizard, learn to use your cantrips more often. Second you have meta magic points to recover or create spell slots. Wizards have Arcane Recovery to do the same.
I have beat BG3 on Tactician with a Wizard level 12 Conjuration, on 20 long rests TOTAL through the WHOLE campaign. Dont get me wrong it was hard as hell but it can be done.
