Smite them with a paladin.
Magic missile is 100%, they can't save against that and there's builds to turn that into a lot of damage on top of what you normally get.
There's items to boost your initiative.
Hunger of Hadar can help slow down a couple of them while you deal with the others.
Cloudkill is a CON save, which should be more effective on them than some other spells.
Use a monk against them, some of their own medicine.
Misty step, dimension door, or fly up to a platform as well for anyone you don't want in melee or do that with a fighter to engage them if they are up there plugging away at you.
Not sure what OP team set up may be, would help in giving better pointers.

Could also be your under leveled. I have heard people rushing it and getting to the fight at only lvl 7ish to 8.... If that is the case then yes can see how it would be a difficult fight.
Usually I am lvl 10 at this fight. (Sometimes if I "rush" it I am Lvl 9 a smidge away from 10.
Also keep in mind that in the astral plane your characters can also jump very far, so closing the distance between you and any monk shouldn't be a problem. If Gale is an evocation wizard he can throw out all the aoe damage spells he has against anyone and not hit your party, should that be a concern. Just keep in mind this only applies to evocation spells, so any conjuration aoe damage spells will still damage the party. If Gale has metamagic adept (assuming it's a feat in the game and not just one that I've used forever from the 5e Feats mod) he can also dual cast Haste on Lae'zel and Karlach, who, when raging, will have resistance to all the attacks the githyanki are doing, though to be fair, if Shadowheart used mass healing word and the above mentioned items, so would everyone else in your party. And by that point Lae'zel should have up to 6 attacks per round when hasted with Action Surge.
All that said, monks are very, very effective in melee so it shouldn't be a surprise that facing 4 to 6 of them at once is a struggle. If you're having trouble reaching the portal when you're first woken up keep in mind that Astarion can dash twice per round, and there's really no reason to fight the gith in your camp.
Also, any CC is near cheaty in ttthis game, it'll save you lives, or saves. Pure damage isn't always the answer, unless you control the battle and hold initiative.
But CC spells like Hold Person are really helpful. They don't always hit, but they hit often enough. However, if you yourself get stunned or CC'd, it can snowball on you very badly, very quickly.
I will also say that Elden Ring experience means nothing. Elden Ring is an entirely different kind of game. This is turn-based combat. More like XCOM than Elden Ring.
And healing is mostly a trap. Use healing outside combat, and for bonus actions. You want Shadowheart casting Hold Person with her action, not trying to heal people. The best "healing" is to kill the enemies before they can do damage to you.
OP needs to share a bit more about their party set-up: companion classes and preferred companion strats. Only then can we guess at where they're going wrong.
Sounds a bit like party is caster heavy?
