You lose 2 feats and an extra attack, but get a 2d6 sneak attack to go around (which is 2~12 instead of 1~6 you'd normally get from a scimitar) and 2 bonus actions for things like cunning actions and potions and such. Sneak attack also stacks with battle master maneuvers if you use it as a reaction.
Besides that, I'm not a huge fan of Dex melee fighters in BG3 because a fair amount of locations have chasms and other dangerous areas, and most enemies with a modicum of strength won't hesitate to shove you around, sometimes to your death, if you don't have STR to resist it. So I would go with Rogue and play around disengage and repositioning to avoid that.
Lose 1 feat only, max feats of a 12 fighter would be 4 anyway. No reason to go thief if he’s not using off-hand (and i don’t know why). There’s no swashbuckler/duelist class in 5e, unfortunately, much less parry as it was in 3.5e.
He can invest in acrobatic proficiency to counter this, rogue has expertise, which will double proficiency points on checks.
Fighter fits your description best.
If the game were to adhere to the rules properly, a free off-hand would allow for grappling and the like, or for weapon throws, or for spellcasting in a different curcumstance.
Now were the ruleset itself less dumbed down, having a shield or an off-hand weapon would have had penalties (severely impaired dex checks or greatly lowered attack bonuses without feats), so there'd at least be a few good reasons to only have a single one-handed weapon.
Ranged fighter >> ranged rogue, because of 3+ attacks per round.
Melee rogue is terrible, unless you have some crazy option with assassin + paladin build.
In short -> build pure fighter and enjoy.
if you need skill proficiencies - ignore fighter, bard and rogue are the best here, just bring bard into your party (LORE bard) and enjoy sklll monkey.
