As for Dark Urge, it has many unique dialog strings, even through sweetheart pieces, but his/her nature doesn't mind enticing others into romance.
Concerning your party set - you said you're going to multiclass MC between Sorcerer and Paladin, adding to him/her Gale and Shadowheart. So IMHO you're going to have 2.5 more-magic companions and 1.5 fighters. In that case I'd definitely taken Karlach to balance, while switching between Shadowheart and Astarion as situation needs
Based on what you described I would go with Karlach at the moment.
Why not taking Karlach and Astarion with you? That is, should you decide against romancing Shadowheart.
And, Thank you for confirming my gut feeling that Karlach is good for my party, will keep this in the back of my mind
I do not know your build nor your oath of your Paladin. Even less how you have built your fellow party members. I imagine your "Sorcadin" is a little like what I have mentioned here

Either way, main point is, aside of party composition balance, that storywise seems a better fit with Gale, Karlach and Astarion like that in party if you like them that much that you cannot decide. Shadowheart you will have plenty of in case where you would romance her.
But then some people want their ex and their current partner in the same party... I do not judge.
Just compositionwise it is still more interchangable depending on what you have in mind for every character.
Also that guide made me feel like I was making my character horribly (I chose different subclasses for both of them)
