If the host plus three are all in a full lobby there wont be any interaction between the story characters anyway really, This way you can all have a characters personal story which could possibly intrude on other players stories which could lead to some pretty fun moments, Unless your group doesn't like that kind of tension then a full custom party will do just fine you just wont get any story from the origin characters really not much anyway.
if you install the mod, it means you can max the party size at 8 instead of 4. meaning each of you can take 1 npc under their wing and play that way. and this way each of you can also romance a spesific npc by playing/controlling that npc, so you can grind sympathy and romance; unlocking even more quests and interactions.
also depending on the romance progression, also download and install "approval cheat" mod and give approval to left behind (progression wise staggered) npcs. that way all of you guys can progress the approvals at the same tempo.
vanilla game can also be enjoyed coop without any mods. but compared to singleplayer experience, you lose a lot. by installing these 2 mods, you circumvent and fix that problem.
Mods get broken by patches, and usually disable achievements. I'll consider this when the game is patch rate has settled.
