Only Bards can play instruments AFAIK.
At at TTRPG you'll often get away with substituting Performance for one of the others at a slight difficulty increase.
Butn BG3 Performance mostly has two near identical uses;
making money through performances (with instrument proficiency thrown in) and making money through performances while the party rogue tries to steal something worth more.
Otherwise, bards know this innately. There is a feat that grants it.
It is amazing for stealing stuff, esp locked doors that you can close then clean it out.
Also the music is pretty good, esp with multiple players. Drum and violin are exceptional IMHO.
