Alt-F4 even as host doesn't do diddly. Tried it right off the bat and it just saves the game and closes the application. You can easily reload that save and it will still be set for honor mode.
Loss of power may corrupt a save game, but it wouldn't be such a targeted and specific thing it would likely just make the game entirely unplayable or the save game corrupted to the point it doesn't run.
My best guess is when the lobby was started it simply was set on the default option for one reason or another.
I'm not sure how to tell you this, but it does absolutely jack diddly and I can say this because I've literally tried it myself.
Specifically in solo mode, because I'm not the kind of guy to crash the game on 3 other players just to feed my ego or test obscure game rules. I just wanted to know how Larian thought they could keep people from using Alt-F4, and it turns out they just save the game and close the application. There is no change to the difficulty mode whatsoever.
Perhaps it is a bug in multiplayer, but that makes no sense given that we already know their solution for solo play and there is no particular reason to have it work differently for the host of a multiplayer game.
One thing I know for sure is that a multiplayer person dropping from the game does nothing to the difficulty mode, and since they have no effect on save games it's illogical to say it would between quitting normally and using Alt-F4. Their method of leaving has no effect on the game, nor could it theoretically change the outcome of events that have already happened.
If it broke on your game, I'd suggest it's a limited and unintended glitch that certainly does not reliably reproduce itself.
