This run, it is my Tav as Paladin vengeance, Wyll Monk Open Hand, Astarion Ftr/Rogue (just to good to pass up), and Gale pure Wizard.
Having a great time in the second run as well. :)
Currently I have Tav Fighter, Shadowheart Cleric and Astarion Rogue/Ranger and Gale Wizard, but I'm just level 5 and considering multiclassing both Shart and Gale.
And another playthrough I have Tav Paladin, Gale Wizard, Astarion Rogue/Ranger and Wyll Warlock, but I will most likely multiclass Tav with Fighter, Gale with Sorcerer and I may replace Wyll for Halsin as Druid, when I get him.
Also my fourth position is always the one I switch out for the quests.
Food is optional if you want people drunk ASAP for the lulz.
Well, you forgot the music!
Personally, I'm partial to mezcal, but you should offer some drink variety as mentioned.
A pool would be a nice addition.

I think 2 Barbarians (Karlach and Lae'zel) with Hill Giant elixirs are unstoppable. Then add Astarion and a Sorcerer.
Just tried Karlach and laezel and it didn't go as well as I hoped. Karlach took a serious beating if nothing else I guess.
2. Shadowheart respected her from the beginning to a Tempest Cleric with a 2 level dip in wizard. using mainly thunder/lightening spells
3 Jaheira Fighter 6 Druid 6 multi class to keep her the way for which she was in BG 1 & 2.
4. Wyll Warlock 6 Bard 6
The key is Advantage (via Reckless Attack) and +5 Attack +5 Dmg (via elixir). You'll hit everything. Add Great Weapon Master at lvl 4.
Tactics matter too. Both Surprise and Initiative for all battles. Your Barbarians will really start to kick ass - always hitting for big dmg.

some of my favorite classes are monk, sorcerer, bard, fighter, druid
but break it down. you need at least 1 healer, one melee damage, one spell damage, and someone should be able to pick locks, and someone should be able to talk to people effectively. Any combination that has that will do well.
Tank: Fighter and Paladin are the standouts here. People who say Barbarians are... wrong. Having resistance to a handful of damage types doesn't mean much when your AC is so abysmally low. Certain Monk, Druid, and Cleric builds can also tank quite well, but you have to know what you're doing.
Healing: Bard is the winner here, followed by Ancients Paladin, Cleric, and Druid, in that order. You HAVE to have a healer; it is extremely unlikely you'll be able to finish the game without one.
Arcane Mage: Wizard and Sorcerer are the obvious ones, but certain subclasses of Cleric and Druid get some really solid options in this regard. Warlocks are the secret winners here, though. Hunger of Hadar and Eldritch Blast are among the best offensive abilities in the game, but Warlocks are a bit niche to play, and not very versatile.
Melee Damage: These are a lot of options for this. Most every class has some solid options for this (yes, including Wizard and Sorcerer), but some are less obvious than others.
Lockpicker: You will NEED someone to pick locks and disarm chests. Rogue is the obvious choice, but Bards are also good at this, and anyone with good DEX can do this so long as you get the proficiency as well; Rogues and Bards will just be better in most cases.
MY RECOMMENDATION FOR FIRST PARTY:
1) Paladin of Ancients. One of the best healing classes in the game, weirdly enough. Paladins are a little sensitive to play, because it's pretty likely you'll accidentally break your oath at some point. You can either steer into that, or repair it. It's annoying, but not a major deal. In the meantime, this gives you a great tank, a great healer, the best melee damager in the game, and-- if you take six levels of Paladin and six levels of Sorcerr-- a really solid magical damager as well. Plus, the levels of Sorcerer will give you more spell slots for smiting, which is where the real damage comes from.
2) Shadowheart, but respec her as a Tempest Cleric. This subclass is arguably OP. You get heavy armor, Call Lightning (one of the best offensive spells in the game), a way to boost your lightning/ thunder damage, and you've still got all the awesome cleric goodies.
3) Lae'zel, but respec her to have good INT so you can make her an Eldritch Knight. People disregard this class because it isn't fancy enough for them, but the versatility of spells-- even just a few of them-- is absolutely amazing.
4) Wyll as a Warlock and/ or Bard. Eldritch Blast + Agonizing Blast + Repelling Blast ends up being one of the most efficient ways to control and kill enemies late in the game. Hunger of Hadar is one of the best battlefield control spells. Bards have the best single-target crowd control spells and party support abilities. This would also be a good option for your lockpicker.
Honorable mention goes to Halsin, because druids are AWESOME in this game. There are lots of places to get into nooks and crannies with Wild Shape, they're competent healers, and solid offensive casters. The three subclasses play very differently, so adjust to your needs.
Regardless of what party you build, have someone who can talk to animals. You find lots of potions, and it's a relatively easy spell to find, via scrolls or level-up.
