You will get the chance to kill her in Act 3 if you recruit Minsc; I always do, so I always do.
Talli the LL Quartermaster is available for before and after the fight, my one quibble is she is constantly wandering around apparently taking weapons and armor off dead Harpers, so it takes a while to click on her, "LOL".
2. Let the eyes see that and join the battle
3. Let the eyes call reinforcements
4. Kill those reinforcements as they arrive
5. Repeat until there is no more reinforcements coming
6. Congrats, you've killed almost everyone in the Moonrise "without alerting anyone"
7. When you assault Moonrise, you'll be met by an "army" of 4-5 cultists led by Zell... because you've killed everyone beforehand
I'd like to point out that Moonrise in particular is the best spot for me to do the Backpack Trick by selling Roah and Lann Tarv a bag and filling it with their inventory every single time I rest. By the time I get out of GoS, Roah's gone (and I can geek her ass in Act III), and Lann is auto-hostile, so they die anyways, giving me a FAWKLOAD of good stuff.
As for Araj, well . . . Other than squicking Astarion dafuq out and me personally having a problem with how she tries to force herself onto him basically (he equates it to being compelled into bedding potential targets for his old slaver so, uh, yeah), she's actually a great merchant to max her attitude on for your face since she sells alchemy stuff and special arrows in Act III (plus her bloodbomb potions if you complete that questline, it's like 8d8 damage per bomb which is pretty good overall, plus the exploding blood passive is decent-ish for Heat builds), so make her happy and when he btfo's Moonrise she'll remain happy in Act III.
I did not know about the Act 3 "bloodbombs" I had read about the explosive blood and didn't want to follow through on her request. Bg3.wiki says this:

When spoken to next, Araj will be first thrilled to see they've survived, and then just as excited at the results. She giddily deems the character the "world's first detonative exsanguinator." In parting, and with no qualms at having so risked the character's life, she'll offer to provide another explosive in exchange for a nominal fee: another blood donation.
Agreeing to donate blood again will cause the character to take 2 damage, but gain a Sanguine Explosive. Refusing to hand over any more blood will turn her permanently hostile.
Thereafter, Araj will accept blood donations once per long rest, gaining two Sanguine Explosives in her trader inventory each time.

So, she doesn't exactly "sell" those SEs, but you can get two from her per LR/donation. The Wiki says they do 4-32 force and 4-32 fire damage, yeah, total 8-64. Admittedly, those are pretty good grenades.
Not only a Sorc, Bard and Monk as well.
And the merchants should not vanish, even when you attack the cultists, at least that was in my playthroughs the case.

Wait, Lann Tarv fights for me? Not for the Absolute faction?!
1. You can still use merchants and do stuff in the towers, if you need it
2. If you decide to assault the towers = it's pretty much impossible for Jaheira to die because there's just too few enemies remaining
3. If important - that's some XP boost so you're guaranteed to have that level 9 before Moonrise (though usually, if you didn't skip stuff, you don't need it)
Thunderwave, Shatter, or put him on a Reverb build and spam Magic Missile. Realistically, though, literally anything that can deal 8 to 16 points of damage to the Scrying Eyes is enough to break them, so MM on its own should do it, especially if he's got Spellsparkler equipped.

No, Lann's an Absolutist, and he will be in the fight at Moonrise after GoS. That's why I said he's the best for the Backpack exploit, since you get to Moonrise early Act II while the actual battle, that's supposed to happen if you follow the narrative sequence of events, happens late Act II.
I did get his favor and double the sell price. That doesn't change anything?
