Optimal Gloomstalker build?
I'm trying ranger this time around in honor mode and I'm wondering what is preferable, Ranger/Rogue (thief or assassin?) or maybe some kind of mix of Ranger/Fighter/Rogue? It's been really smooth so far as just a ranger hitting level 5, but I'm sure that's not too ideal. Also are dual handbows really that superior to longbows?

I don't even know for sure which Warlock build is "op", I'd try asking the Larian forum. Generally speaking though, I'm under the impression that Ranger has never been considered the best class in comparison to either Fighter or Rogue.

It's unfortunate that it takes until 5th level for Rogue to get Uncanny doge.

I think the best gloomstalker build is 5/4/3 gloomstalker/assasin/figher. 5 gloomstalker for the extra attack and all the first turn goodies it provides. 4 assassin for the feat and all the first turn goodies it provides. fighter 3 could be battle master or champion on your preference but you need at least Fighter 2 to get that juicy action surge. tripping attack and a couple other manouvres are really strong for battle master or lowering the crit requirement can be really strong too if you have some other crit lowering gear.

Overall it's one of the if not the strongest builds in the game. With the right gear you'll be pumping out an easy 250+ damage on turn one. Bonus points if you go Dark Urge and use the invisibility cloak for extra advantage.

NP! The only thing I forgot to mention is that you have to make sure you build your stats correctly depending on which class you start as. If you start as Rogue you're all good but if you start as Ranger you'll want to make sure get high DEX otherwise it will hurt your AC and ranged damage output.

Also the reason dual handbows are better than longbows is because with two-weapon fighting you can add your attack modifier to the off-hand attack which means your off-hand shots will hit HARD. Basically most of your bonuses to off-hand melee will also apply to off-hand ranged.
