As to your specific machine, you may want to check specs vs. what Larian suggests, and also talk to people playing on comparable hardware.

I finished this game on a M2 Mac Mini. I don't think I would recommend using it on pre-M1/M2 Macs. It seems to really run best from a SSD.

Act 3 is finishable on any platform. I've done it multiple times. Does it still have bugs? Yes.

Mac users seem to be having a problem with some things in the Epilogue, and Larian says they are working on it.

Comparing a 2021 Mac laptop with identical HW to a PC laptop of the same year to something from before you were born? Classy.

FWIW: There were/are some performance issues with Chapter 3.
Mostly for people with older hardware than yours.
I don't know the specs of the mac book you mentioned but Macs aren't suffering worse than PC users running Vulkan and hundreds of thousands of them make it through the occasional ACT 3 FPS drops.

Of course you're free to wait for a Mac user confirmation, but I suspect you'd get one sooner on a dedicated gaming on Mac community site than on a 99% PC user community like Steam where unfortunately half of them think that they should re-enact XBOX vs PS5 camp stupidities.

The game is a mess on PC, too. My strong advice is to wait, probably a year, before buying it. I wish I had.

The developers say that it should run with high settings on an M1 Pro (specifically mentions that machine). I'm playing at ultra settings on Macbook M2 Pro and is really smooth. The developers are firing out hot-fixes and patches all the time so highly likely that bugs you heard about are long gone.
you could, just install window and a better graphic card, ram and a cpu

Mx chip Macs can no longer emulate or dual boot into Windows.

He has a laptop, therefore he is not free to upgrade many of those things. (This is true of most PC laptops, too.)
